SEA CUCUMBER(Giant Red)

The sea cucumber from British Columbia, Canada is a very unique and special species consisting of two parts; a firm outer skin and a thick inner muscle with five tendons often referred to as the sea cucumber meat. BLACK COD (SABLEFISH)

Black cod is, in actuality, sablefish. Unfortunately (for both you and the fish), it’s hardly ever called sablefish and is more popularly called black cod. This is no new problem, though. The fish’s name has been a sore subject for fishermen for more than a century. According to a 1916 article in the Pacific Fisherman, “The general feeling [is] that the present name is a misnomer and a decided handicap in its marketing… Consumers who want a cod are always disappointed upon purchasing it, while the many consumers who want a rich fish, such as is the black cod, refuse to take it because of the fear that it would be what its common name implies — a dry-meated fish.”

Spot Prawn

BC spot prawns are the largest of the seven commercial species of shrimp found on the west coast of Canada. They vary greatly in size, with some larger females exceeding 23 cm in total length. Prawns are hermaphrodites: for the first two years of their lives they are males, and then they change to females. Typically, spot prawns live a total of four years. Wild BC spot prawns are a delicacy known around the world for their sweet, delicate flavor and firm texture. They are most recognizable for their reddish-brown colour, which turns bright pink when cooked, defining white spots on their tail and white horizontal bars on the carapace.

PACIFIC RED SEA URCHIN

The Canadian sea urchin is the largest sea urchin by volume and is lighter than the Japanese, but just as creamy. Every September, local fishermen bring in wild Canadian sea urchins that are flown in fresh every day, mainly from the waters of Vancouver Island and Queen's Islands of Lotte-Galleon, in northern British Columbia and on the Pacific coast. Canada Green Sea Urchin

Green sea urchins have a circumpolar distribution, ranging into the Arctic regions of both the Atlantic and Pacific Oceans. It is found on the east coast of North America as far south as Cape Cod and in deeper waters to New Jersey, while its distribution ranges southwards to Puget Sound, Washington on the west coast. They live mostly in shallow waters, with a preference for rocky bottom in areas that are not subject to extreme wave action, but they have been found at depths of more than 1,000 metres.

CANADIAN LOBSTER

Wild lobster is caught from the cold and pure waters of the Atlantic Ocean, spanning Canada's five major maritime provinces - Nova Scotia, New Brunswick, Prince Edward Island, Newfoundland, Labrador and Quebec. The color of the Canadian live lobster shell is naturally mottled rust orange and brown green; after cooking, the shell is relatively uniform and bright orange. The tail of the fierce live lobster is strongly curled, not weakly. There are five pairs of American lobsters, including one-on-one big and small pliers; Australian lobster has no pliers.
